Uncoated aluminum pans have some natural release properties, nevertheless, we recommend that you use some cooking oil when cooking, similar to cooking with stainless steel or cast iron pans. Choose an oil with cooking properties that match the food you are cooking. High-temperature grilled meats and fish are best served with heat-resistant oils, such as avocado oil, grapeseed oil, vegetable oil blends, and peanut oil. Foods like eggs or pancakes cooked so low go well with fats like butter, coconut, or light olive oil.
Adding 1-2 teaspoons of water or other liquid (such as broth or wine) can provide additional release properties to many foods. For pasta, rice, or grains, add a small amount of oil during cooking so that it releases easily when cooking is complete.
Use an aluminum pan for quick, even preheating; we recommend preheating over medium heat for no more than 90 seconds before adding food. If placing a smaller diameter pan over a large, high-powered burner, be careful to protect the wooden handle from direct heat or flame.
